Pub-style pork scratchings

Ingredients:
  • 60 g higher-welfare pork rind in one piece
  • 1 teaspoon fennel seeds
Instructions:
  • Preheat the oven to 180ºC/gas 4. Score the pork rind lightly with a sharp knife or ask your butcher to do it. Grind fennel seeds with 1 tablespoon of sea salt and rub onto the pork. Cut the pork rind into chunks and place on a roasting tray in the oven. Spoon out released fat occasionally for roast potatoes. Reduce oven to 160ºC/gas 3 after 20 minutes and bake for 35 to 40 minutes until crispy. Drain on kitchen paper and serve warm or cold with a pint of bitter.
