Flaky puff pastry squares filled with creamy Boursin cheese and topped with sweet tomatoes, baked to perfection.
Ingredients:
  • 1 (5.2 ounce) package garlic and fine herbs cheese spread (such as Boursin®), softened
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon lemon zest
  • salt and freshly-ground black pepper to taste
  • 1/2 (17.3 ounce) package frozen puff pastry sheets (such as Pepperidge Farm®)
  • 1/2 cup chopped grape tomatoes
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • Mix together the cheese spread, parsley, lemon zest, salt, and pepper in a small bowl; set aside.
  • Allow the puff pastry sheet to defrost in the refrigerator for 3 to 4 hours or on the counter for 30 to 40 minutes until it feels cold to the touch and slightly pliable.
  • Gently roll out the pastry with a rolling pin. Cut the pastry sheet along the crease lines to create 3 sections, then cut it down the middle top to bottom to yield 6 squares.
  • With precision, score a line about 1/2 inch from all edges on each square, ensuring not to cut through completely. Generously prick the center of each square with a fork and then place them on the baking sheet.
  • Bake in your preheated oven for 12 minutes. Remove and gently press down the puffed centers, then top each pastry square with cheese mixture and tomatoes before serving.
  • Place back in the oven until the edges turn golden brown and the tomatoes are gently roasted, about 12 to 14 minutes. Enjoy warm or at room temperature.
