Pulled Pork Chilaquiles

Campfire Chilaquiles: Smoky pulled pork layered with crunchy tortilla chips, zesty tomatillo salsa, and melted Cheddar cheese.
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 yellow onion, thinly sliced
  • 0.5 (16 ounce) jar tomatillo salsa
  • 1 cup chicken stock
  • 8 cups tortilla chips
  • 2.5 cups shredded aged Cheddar cheese (such as Beecher's Flagship)
  • 2 cups citrus-braised pulled pork
Instructions:
  • Place a cast iron Dutch oven over hot coals. Melt the butter, then add the onion. Cook, stirring often, until the onion is soft and deeply browned in parts, about 5 to 7 minutes.
  • Combine salsa and chicken stock in the Dutch oven and bring to a boil. Layer half of the chips, Cheddar cheese, and pulled pork, then repeat with the remaining chips, Cheddar cheese, and pulled pork. Cover and cook until the cheese is melted, approximately 5 minutes.
