Delicious pumpkin bars with creamy frosting, perfect for Thanksgiving.
Ingredients:
  • 4 large eggs
  • 1 cup vegetable oil
  • 1 (15 ounce) can pumpkin purée
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.75 teaspoon salt
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 4 cups confectioners' sugar
  • 0.25 teaspoon ground cinnamon, or to taste
Instructions:
  • Prepare all your beautiful, fresh ingredients.
  • Preheat the oven to 350°F (175°C) and prepare the sheet pan by greasing it and lining it with parchment paper.
  • In a large bowl, use an electric hand mixer to beat eggs until foamy. Add sugar, vegetable oil, and pumpkin purée, then beat on medium speed for about 2 minutes until well combined.
  • Combine flour, baking powder, cinnamon, baking soda, and salt in a separate bowl. Gently fold flour mixture into egg mixture until just combined. Transfer batter to the prepared pan and even out the surface.
  • Bake in the preheated oven for approximately 25 minutes until a toothpick inserted in the center comes out clean. Allow it to cool completely for about 30 minutes.
  • Once the cake layer has cooled, prepare the frosting by blending cream cheese, butter, and vanilla in a bowl using an electric mixer until smooth. Slowly incorporate confectioners' sugar until the mixture is velvety.
  • Evenly coat the cooled cake layer with frosting, then dust with a sprinkle of cinnamon to add a touch of warmth and flavor.
  • Cut into 24 delicious bars.
