Whip up a batch of delicious pumpkin butter using pumpkin purée, spices, apple juice, and sugar. Perfect for gifting during the holidays!
Ingredients:
  • 1 (29 ounce) can pumpkin puree
  • 1.5 cups white sugar
  • 0.75 cup apple juice
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
Instructions:
  • Check five 1/2-pint jars for cracks, and discard any defective ones. Place them in simmering water until pumpkin butter is done. Clean new lids and rings in warm soapy water.
  • Combine pumpkin purée, sugar, apple juice, ginger, cinnamon, nutmeg, and cloves in a large saucepan over medium heat. Bring to a boil, then reduce heat and simmer, stirring occasionally, until thickened, about 30 minutes.
  • Fill hot, sterilized jars with pumpkin butter, leaving a 1/4-inch space from the top. Remove any air bubbles by running a clean knife around the edges. Wipe rims clean with a damp paper towel. Seal with lids and tighten rings securely.
  • Allow to come to room temperature, then refrigerate until chilled.
