Elevate pumpkins into a decadent jam with vanilla and orange for irresistibly delicious scones or toast.
Ingredients:
  • 1.1kg butternut pumpkin, peeled, deseeded
  • 450 (2 cups) white sugar
  • 1 vanilla bean, split, seeds scraped
  • 1 orange, juiced
Instructions:
  • Grate the pumpkin and place it in a large bowl. Mix in sugar, vanilla bean, seeds, and juice. Cover with plastic wrap and refrigerate overnight.
  • Pour the pumpkin mixture into a large saucepan. Bring it to a boil over medium-high heat, then simmer on low, stirring often, for 45 minutes until it thickens. Transfer the mixture to sterilized jars. Enjoy on toast or with scones and cream.
