Irresistible mini pies, perfect for holiday gatherings!
Ingredients:
  • 42 3-inch unbaked tart shells
  • 1 (28 ounce) can pumpkin puree
  • 1 (12 fluid ounce) can evaporated milk
  • 2 large eggs
  • 0.75 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 (7 ounce) can whipped cream, or to taste
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Arrange the tart shells beautifully on a baking sheet.
  • Place in the preheated oven for 1 minute. Remove, keeping the oven on.
  • In a large bowl, mix together pumpkin puree, evaporated milk, eggs, brown sugar, pumpkin pie spice, cinnamon, and vanilla extract until smooth. Pour the filling into the tart shells.
  • Place the dish in the preheated oven for 10 minutes. Rotate the pan and continue baking until firm, for approximately 12 more minutes.
  • Allow the tarts to cool for 10 minutes, then refrigerate for approximately 1 hour until chilled. Serve with a dollop of whipped cream on top.
