Elevate your side dish game with caramelized roasted parsnips. Purée and mash roasted parsnips with butter, salt, pepper, and nutmeg for a flavorful twist on traditional mashed potatoes.
Ingredients:
  • 2 pounds parsnips, peeled, stringy cores removed, chopped (about 1 1/2 pounds after removing cores)
  • 3 tablespoons butter, melted (can sub with extra virgin olive oil)
  • 1 1/2 cup water
  • 1/8 teaspoon nutmeg
Instructions:
  • Heat your oven to a toasty 400°F (205°C).
  • Prepare the parsnips by peeling them and making a cut at the top of the fat end to reveal the core. Remove and discard the stringy and woody core before slicing the parsnips.
  • Mix chopped parsnips with melted butter in a bowl until well coated, then arrange them in a single layer on a roasting pan.
  • Roast in the oven for 20-25 minutes until golden, flipping the parsnips halfway through.
  • Blend the cooked parsnips: Transfer them to a blender or food processor, pour in 1 1/2 cups water, and pulse until smooth. Adjust consistency by adding more water if needed.
  • Enhance the flavors: Season with nutmeg, salt, and pepper to your liking.
