Spicy pepper cheese dip - perfect for game day!
Ingredients:
  • 2 poblano peppers, halved lengthwise and seeded
  • 2 Anaheim peppers, halved lengthwise and seeded
  • 1 fresh jalapeno pepper, halved lengthwise and seeded
  • 2 pounds processed cheese food (such as Velveeta ®), cut into cubes
  • 3 large roma (plum) tomatoes, diced
  • 1 large white onion, diced
  • 2 teaspoons ground cumin
  • 0.25 cup heavy whipping cream
Instructions:
  • Preheat the oven broiler and adjust the rack to be 6 inches below the heat source. Line a baking sheet with aluminum foil.
  • Arrange the poblano, Anaheim, and jalapeño peppers cut-side down on the baking sheet.
  • Broil peppers until blackened and blistered, for 5 to 8 minutes. Transfer to a bowl and tightly seal with plastic wrap to steam for about 20 minutes. Peel, discard skins, and dice peppers.
  • In a slow cooker, mix together diced peppers, cheese cubes, tomatoes, onion, butter, and cumin.
  • Cook on Low heat, gently pouring in cream until the cheese melts and the dip is heated through, approximately 30 minutes.
