Whip up a flavorful burrito casserole for a quick and easy meal that kids will devour, perfect for busy weeknights.
Ingredients:
  • 2 pounds ground beef
  • 1 package taco seasoning mix
  • 0.25 cup water
  • 1 (28 ounce) can mild enchilada sauce
  • 1 (16 ounce) can refried beans
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 8 tortillas, cut into 2-inch strips
  • 2 cups shredded Mexican cheese blend
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Preheat a large skillet over medium-high heat. Brown the beef in the skillet until crumbly, for 5 to 7 minutes. Drain any excess grease. Stir in taco seasoning and water until the meat is coated, about 5 minutes. Add enchilada sauce, refried beans, and corn, and mix well.
  • Start by creating a base of tortilla strips in the baking dish. Layer with meat mixture, more tortilla strips, and Mexican cheese, repeating as needed. Finish with a final layer of Mexican cheese on top.
  • Bake until the cheese is bubbly and golden, for 8 to 10 minutes.
