Creamy potato casserole with cheddar cheese, tangy sour cream, and creamy chicken soup.
Ingredients:
  • 8 potatoes, peeled and diced
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 0.25 cup sour cream
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, about 10 minutes. Drain the potatoes.
  • As the potatoes cook, melt butter in a small skillet over medium heat. Sauté onions until beautifully golden brown. Set aside.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Create a velvety potato mixture by blending mashed potatoes with condensed soup and sour cream. Fold in onions, 3/4 cup Cheddar cheese, salt, and pepper, then transfer the flavorful mix into a 2-quart casserole dish.
  • After 30 minutes in the preheated oven, add the remaining 1/4 cup of Cheddar on top and bake for an additional 10 minutes. Serve hot.
