Quick and easy pumpkin mousse: Fold sweetened whipped cream into melted marshmallows, milk, and pumpkin for a simple and delicious treat.
Ingredients:
  • 1 tablespoon butter
  • 24 marshmallows
  • 0.5 cup milk
  • 0.5 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 0.33333334326744 cup confectioners' sugar
  • 1 cup heavy cream
Instructions:
  • In a large skillet, melt the butter. Add marshmallows, milk, and pumpkin, stirring until smooth. Remove from heat and mix in vanilla and pumpkin pie spice. Cool for 30 minutes before serving.
  • In a large bowl, whisk together 1/3 cup confectioners' sugar and 1 cup heavy cream until stiff peaks form. Gently fold the whipped cream into the cooled pumpkin mixture. Spoon the mousse into ramekins or chocolate shells. Chill in the refrigerator until firm, approximately 2 hours.
