Luscious limoncello cake is a guaranteed hit for any summer gathering.
Ingredients:
  • cooking spray
  • 1 cup sour cream
  • 1 cup white sugar
  • 0.33333334326744 cup canola oil
  • 2 eggs, beaten
  • 3 tablespoons limoncello liqueur
  • 1 lemon, zested
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 pinch salt
  • 0.5 cup confectioners' sugar
  • 2 tablespoons limoncello liqueur
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), and give your 8-inch square cake pan a quick spray with cooking spray.
  • Combine sour cream, white sugar, canola oil, eggs, 3 tablespoons of limoncello, and lemon zest in a large bowl, whisk until smooth.
  • In a separate bowl, sift together flour, baking powder, baking soda, and salt. Then, add the flour mixture to the sour cream mixture and gently stir with a wooden spoon until just combined. Transfer the batter to the prepared cake pan.
  • Bake in the preheated oven for 33 to 35 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 5 minutes.
  • Combine confectioners' sugar and 2 tablespoons of limoncello in a bowl, whisk until smooth glaze forms. Spread glaze over the cake and allow it to cool completely before slicing.
