Satisfying corn, onion, and hash brown chowder - cozy comfort in a bowl for winter days.
Ingredients:
  • 2 tablespoons butter
  • 0.75 cup chopped onion
  • 3 cups frozen whole kernel corn
  • 1 cup water
  • 1 cup frozen hash brown potatoes
  • 1.25 teaspoons ground black pepper
  • salt to taste
  • 2 cups milk, divided
  • 2 tablespoons all-purpose flour
Instructions:
  • In a large saucepan over medium heat, melt the butter until sizzling; sauté the onion until soft, approximately 5 minutes. Add the corn, water, hash brown potatoes, black pepper, and salt. Allow the mixture to come to a boil, then reduce the heat, cover, and simmer for 5 minutes.
  • Whisk together 1/2 cup of milk and flour in a small bowl until well combined and smooth.
  • Pour the luscious milk mixture into the saucepan and combine it with the remaining 1 1/2 cups of milk. Cook and stir diligently until a delectably thick consistency forms, which should take about 5 minutes.
