Miniature fairy cakes, perfect plain or with a sweet glaze. Quick and tasty for a delightful after-school snack.
Ingredients:
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1.75 cups self-rising flour
  • 4 large eggs, beaten
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare two 12-cup muffin tins by greasing them or lining with paper liners.
  • In a large bowl, use an electric mixer to cream together the butter and sugar until light and fluffy. Mix in half of the flour and half of the eggs until smooth. Then, add the remaining flour and eggs and continue beating until the batter is light and fluffy.
  • Fill the prepared muffin cups with batter, leaving 1/4 of the space at the top of each cup.
  • Bake in the preheated oven for 10-12 minutes until the tops spring back when lightly pressed. Cool in the tins for 5 minutes, then transfer to a wire rack to cool completely.
