Delicious beef stir-fry ready in under 30 minutes for a quick meal.
Ingredients:
  • 1 pound top sirloin or chuck steaks (about 1/2 inch thick), trimmed
  • Salt and freshly ground black pepper
  • 1 large clove garlic, minced
  • 3 tablespoons extra virgin olive oil, divided
  • 1 medium green bell pepper, sliced into 1/4-inch strips
  • 1 medium red bell pepper, sliced into 1/4-inch strips
  • 1/2 yellow onion, thinly sliced lengthwise (root to top)
  • 12 cherry tomatoes, halved, or 1 large tomato, roughly chopped
  • 2 tablespoons chopped cilantro, optional
  • 1 tablespoon soy sauce (use gluten-free soy sauce if cooking gluten-free)
  • 2 teaspoons toasted sesame oil
Instructions:
  • Prepare the steaks: Season them with salt and pepper, and massage minced garlic onto one side. Place the steaks between plastic wrap and gently pound to 1/4-inch thickness with a meat pounder. Rest for 10 minutes to enhance the garlic flavor.
  • Prepare the beef: Cut the steaks into 1/2-inch wide strips by slicing them across the grain.
  • Heat a generous amount of oil in a large skillet until sizzling. Add the onions and bell peppers, cook quickly until slightly softened and vibrant, then transfer to a bowl to stay warm.
  • Heat an extra tablespoon of oil in a hot skillet until it shimmers. Add beef strips and let them brown without stirring. Once one side is browned, stir constantly for about a minute for medium-rare doneness.
  • Combine in the pan: Peppers, onions, tomatoes, cilantro, soy sauce, and sesame oil. Sauté for an additional 30 seconds, stirring gently. Take off the heat, season with salt and pepper. Enjoy on its own (paleo, low carb), or alongside steamed rice.
