Cheeseburger hand pies with beef, onion, cheese, pickles, and a pie crust bun.
Ingredients:
  • 0.5 cup shortening
  • 4 tablespoons cold water
  • 1 small onion, chopped
  • 0.25 cup all-purpose flour
  • 0.33333331346512 cup dill pickle juice
  • 0.33333334326744 cup milk
  • 0.5 cup chopped dill pickles
  • 2 cups shredded Swiss cheese, divided
Instructions:
  • Heat your oven to 425°F (220°C).
  • Combine 1 1/3 cups flour and 1/2 teaspoon salt in a medium bowl. Cut in shortening until the mixture resembles tiny peas. Gradually add cold water, 1 tablespoon at a time, stirring with a fork after each addition. Mix lightly until the pastry almost cleans the sides of the bowl. Press into the bottom and sides of an 8-inch pie pan. Bake in a preheated oven for 15 minutes.
  • In a large skillet over medium heat, cook ground beef until crumbled, about 1 minute. Add onion and garlic and cook until onion is browned, approximately 10 minutes. Drain any excess grease.
  • Season beef mixture with a pinch of salt and a sprinkle of flour. Mix in pickle juice, milk, chopped pickles, and a generous amount of shredded cheese. Fill pastry shell with the flavorful mixture.
  • Bake in preheated oven for 15 minutes. Sprinkle with 1 cup of cheese and bake for an additional 5 minutes, until pastry is golden brown and cheese is bubbly.
