Cheeseburger Muffins

Cheeseburger quick bread: perfect for brunch or game day.
Ingredients:
  • cooking spray (such as Pam®)
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.75 cup ketchup
  • 2 eggs, beaten
  • 1 teaspoon prepared yellow mustard
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C), then line 24 muffin cups with paper liners and give them a light coat of cooking spray.
  • In a sizzling skillet, cook and stir beef and onion until the beef is golden brown and crumbly, about 5 to 7 minutes. Drain off excess grease.
  • In a large bowl, combine flour, sugar, baking powder, and salt. In a separate bowl, whisk together ketchup, milk, butter, eggs, and mustard until well combined. Pour the wet mixture into the dry ingredients and mix until a pink batter forms. Carefully fold in the ground beef until just combined. Fill prepared muffin cups to the top.
  • Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
