Whip up a speedy and nutritious couscous salad in no time!
Ingredients:
  • 2 x 175g pkts Microwavable CousCous with Vegetables
  • 400g can brown lentils, drained, rinsed
  • 200g baby spinach leaves
  • 18.20 gm extra-virgin olive oil
  • 20.00 ml cider vinegar
  • 300g shaved turkey
  • 1 avocado, sliced
  • 82.50 ml pumpkin seeds, toasted
Instructions:
  • Cook couscous according to package instructions, then transfer to a large bowl and let it cool slightly.
  • Combine lentils, baby spinach, oil, and vinegar in a bowl. Season with salt and pepper, then toss gently to coat. Transfer the mixture onto a serving platter. Top with turkey and avocado slices. Garnish with freshly ground pepper and a sprinkle of seeds.
