Family-favorite pasta with beef, pineapples, curry, and creamy sauce - Quick and delicious!
Ingredients:
  • 1 pound penne or other pasta of your choice
  • 2 tablespoons olive oil
  • 1 (15 ounce) can pineapple chunks, drained, liquid reserved
  • 1 medium leek, cleaned and thinly sliced
  • 3 tablespoons mild curry powder
  • 1 tablespoon instant vegetable bouillon granules
  • 4 tablespoons tomato paste
  • 1 cup heavy cream
Instructions:
  • 1. Boil a large pot of lightly salted water. Add penne and cook until al dente, about 11 minutes, stirring occasionally.
  • Heat oil in a large skillet until shimmering. Cook ground beef, stirring occasionally, until browned, for approximately 5 minutes. Stir in pineapple chunks and leek, cooking over medium-high heat for another 5 minutes. Pour in half of the pineapple juice and season with curry powder, bouillon, salt, and pepper.
  • Combine ketchup and tomato paste until mixed thoroughly. Simmer covered on low heat for 5 to 8 minutes. Add more pineapple juice if needed to reach desired consistency.
  • Add the cream and stir until fully incorporated. Let it cook for an additional 2 minutes.
  • After draining the pasta, toss it into the skillet with the sauce. Stir thoroughly and dish up.
