Quick five-spice pork and broccolini stir-fry

Whip up a speedy five-spice pork and broccolini stir-fry for a delicious dinner in no time!
Ingredients:
  • 100g rice stick noodles
  • 400g Pork Fillet, thinly sliced
  • 1 red onion, cut into wedges
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1 tsp Chinese five spice
  • 2 tsp sesame oil
  • 2 bunches broccolini, ends trimmed, cut into 5cm lengths
  • 200g snow peas, halved lengthways
  • 125ml oyster sauce
  • 45g almond
  • 125.00 ml coriander leaves
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Allow the noodles to soften for 3-4 minutes. Drain the noodles before using.
  • Combine pork, onion, ginger, and Chinese five spice in a large bowl. Heat oil in a wok over high heat. Stir-fry pork mixture in 4 batches until golden, about 2 minutes each. Transfer to a bowl.
  • Toss broccolini and snow peas in the wok for 2 minutes until vibrant and tender-crisp. Add the pork mixture, noodles, oyster sauce, and half the almonds; stir-fry for 2-3 minutes until heated through. Serve on plates and garnish with coriander and remaining almonds.
