Delightful and delicious baked treat for all to enjoy!
Ingredients:
  • 3 x 180g blocks dark chocolate, broken into pieces
  • 1/2 x 250g packet milk arrowroot biscuits
  • 16.25 gm shredded coconut
  • 62.50 ml pistachio kernels
  • 62.50 ml raisins
  • 100g glace cherries, halved
  • 60g butter, chopped
Instructions:
  • Prepare a 6cm-deep, 19cm square cake pan by greasing lightly. Line the base and sides with baking paper, ensuring a 2cm overhang on all sides. In a glass or ceramic heatproof bowl, combine chocolate and butter. Place the bowl over a pot of simmering water. Stir occasionally with a metal spoon for about 10 minutes until melted and smooth.
  • Take the pan off the heat. Crumble the biscuits. Combine them with coconut, pistachios, raisins, and cherries. Mix well. Transfer the mixture into the pan. Press it down evenly. Chill in the fridge overnight or until set.
  • Take it out of the fridge and let it sit for 10 minutes before slicing and serving.
