Delicious vegetarian burgers featuring quinoa, halloumi, and olives for a meat-free option.
Ingredients:
  • 140g quinoa
  • 100g haloumi, grated
  • 40.00 ml drained Sliced Kalamata Olives, chopped
  • 62.50 ml drained Sweet Spiced Onions*
  • 82.50 ml flat-leaf parsley, chopped
  • 62.50 ml mint, chopped
  • 2 Free Range Eggs, lightly whisked
  • 35g breadcrumbs
  • 36.40 gm olive oil
  • 4 Rolls, split, toasted
  • 60g pkt Baby Spinach
  • 125.00 ml drained Garlic Infused Capsicum*
  • 1 avocado, stoned, peeled, sliced
  • 62.50 ml drained Traditional Dill Cucumbers
  • 110g chutney
Instructions:
  • Prepare the quinoa per the instructions on the packet. Once cooked, transfer it to a heatproof bowl and allow it to cool for 15 minutes.
  • Combine grated haloumi, kalamata olives, onion, parsley, mint, egg, and breadcrumbs with quinoa. Season with pepper and mix well. Shape the mixture into 4 patties, then chill in the fridge for 20 mins before cooking.
  • Heat oil in a frying pan over medium heat until shimmering. Cook patties for 3 minutes on each side, or until beautifully golden and perfectly cooked through.
  • Place a layer of fresh spinach, crisp capsicum, savory patties, creamy avocado, tangy dill cucumber, and flavorful chutney onto the roll bases, then finish by adding the roll tops. Enjoy the delicious layers of flavors in each bite!
