Quinoa and oat bran chocolate chip cookies - perfect for tea or coffee!
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup light brown sugar
  • 2 eggs, beaten
  • 1 cup chocolate chips
  • 1 cup quinoa flakes
  • 0.5 cup oat bran
  • 0.25 cup light cream
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C and line a baking sheet with parchment paper.
  • Combine the flour, baking powder, and baking soda in a bowl.
  • In a large bowl, use an electric mixer to blend the butter and brown sugar until smooth. Add one egg and mix well. Then add the second egg, along with vanilla extract. Stir in the flour mixture until just combined to form a batter. Gently fold in the chocolate chips, quinoa flakes, oat bran, and cream to evenly distribute throughout.
  • Form dough into petite spheres and place on lined baking sheet, ensuring they are 2 inches apart.
  • Bake in the preheated oven until lightly golden, approximately 10 minutes. Allow the cookies to cool on the pan for 10 minutes before transferring them to a wire rack to cool completely.
