Radish and coriander pickle

Zesty radish pickle adds a refreshing crunch to any curry.
Ingredients:
  • 2 handfuls mixed radishes
  • 1 teaspoon cumin seeds
  • 1 small dried chilli
  • ½ thumb-sized piece ginger grated
  • 1-2 limes juice of
  • 6 tablespoons olive oil
  • 1 handful coriander leaves
Instructions:
  • Slice the large radishes thinly using a speed peeler. For the smaller radishes, trim the ends and cut them into quarters. In a pestle and mortar, crush the toasted cumin with dried chili and grated ginger. Stir in lime juice, oil, salt, and pepper. Mix the radishes with coriander leaves and dressing; toss gently. The dish can be prepared up to 2 hours ahead.
