Ingredients:
  • 250.00g butter, softened
  • 4.40 gm vanilla extract
  • 161.25 gm caster sugar
  • 225.00 gm self-raising flour, sifted
  • Food colouring (Pink, green and yellow)
  • Smarties, jelly beans, snakes, jubes, to decorate
  • 100s and 1000s, to decorate
  • 225.00 gm icing sugar mixture
  • 20.60 gm milk
Instructions:
  • Preheat your oven to 180°C (160°C for fan-forced). Line a 12-hole muffin pan with paper cases that hold 1/3 cup each.
  • With an electric mixer, whip together butter, vanilla, and sugar until it's light and fluffy. Gradually add eggs one at a time, mixing well after each addition. Gently fold in the flour and milk until fully combined.
  • Divide the batter evenly among the paper cases. Bake for 25 minutes or until a skewer comes out clean when inserted into the center of a cake. Allow the cakes to cool in the pan for 2 minutes, then transfer to a wire rack to cool completely.
  • Prepare the icing: Cream the butter with an electric mixer until pale. Slowly incorporate the icing sugar mixture and milk, beating until well combined. Separate the icing into 3 portions and dye each one a unique color.
  • Prepare colorful lollies and 100s and 1000s in separate bowls. Allow kids to have fun spreading icing on cupcakes and creatively decorating with the colorful toppings.
