Ramen noodles

Homemade ramen noodles should be chewy and absorbent, enhancing the savory broth. Despite being a bit time-consuming to prepare, the process can be relaxing and rewarding.
Ingredients:
  • 40 g rye flour
  • 300 g strong white flour
  • 150 g plain flour
  • 1 teaspoon kansui powder (see tip)
  • cornflour for dusting
Instructions:
  • Boost the flavors by toasting the rye flour in a large dry pan over medium heat for 4 minutes until fragrant. Transfer to the bowl of a stand mixer and combine with the other flours. Dissolve the kansui powder and 1 teaspoon of sea salt in 420ml of cold water. Slowly add the water to the flours while mixing with the dough hook until a grainy non-sticky dough forms. Wrap in clingfilm and chill in the fridge for 1 hour. When ready, roll out a piece of dough using a pasta machine, folding and rolling until thin. Cut into noodles, dust with cornflour, and repeat with the remaining dough. Cook the noodles by boiling for 45 seconds and drain well.
