Quick and satisfying ramen-egg scramble with a spicy kick - ideal for breakfast or lunch.
Ingredients:
  • 1 (3 ounce) package ramen noodles (any flavor)
  • 1 teaspoon chopped fresh parsley, or to taste
  • 1 tablespoon vegetable oil
  • 0.5 onion, chopped
  • 2 large eggs
  • 1 teaspoon water, or as desired
  • 1 pinch salt
Instructions:
  • Boil water in a pot, then add ramen noodles and cook for 3 minutes. Drain the noodles and mix in the seasoning packet and parsley. Stir well to combine flavors.
  • In a nonstick skillet, heat oil over medium heat. Sauté onion until fragrant, about 2 minutes. Add noodles and stir for an additional 2 minutes.
  • Combine eggs, water, and salt in a bowl and whisk. Pour into the skillet with the noodle mixture. Cook while stirring until eggs are fully set and cooked, about 2 to 4 minutes.
