Elevate breakfast pork gravy with fresh ramps, apple, and serve over fluffy biscuits for a flavorful spring dish.
Ingredients:
  • 1 pound mild pork sausage
  • 0.5 cup grated apple
  • 4 ounces ramp, wild leek
  • 1.5 tablespoons all-purpose flour
  • 1.75 cups whole milk
Instructions:
  • Begin by heating a spacious 12-inch cast iron or heavy-bottomed skillet over medium-high heat. Once warm, introduce the sausage and crumble into small pieces using a wooden spoon. Add the apple and almost all of the ramps, reserving 1/4 cup for later. Cook over medium-high heat until the sausage turns brown and crumbly, which should take about 6 to 8 minutes.
  • Reduce the heat to medium, evenly sprinkle the sausage with flour, and stir until well coated. Cook for 1 additional minute.
  • Gradually add the milk while stirring until the gravy thickens slightly but remains loose, about 5 to 7 minutes. Remove from heat and season with salt and pepper. Sprinkle with the remaining ramps before serving.
