Savor a delectable Saturday brunch featuring Welsh rarebit topped with a perfectly fried egg.
Ingredients:
  • 80ml cider vinegar
  • 10.00 gm caster sugar
  • 1 small red onion, thinly sliced
  • 180g cheddar cheese
  • 80ml ale
  • 1 tsp mustard powder
  • 1.25 gm paprika
  • 12.20 gm Worcestershire sauce
  • 4 slices sourdough bread
  • 1 bunch watercress, leaves picked
  • 36.40 gm extra virgin olive oil
  • 4 fried eggs
Instructions:
  • In a saucepan over medium heat, combine vinegar, sugar, and 1/2 teaspoon salt. Simmer until just bubbling, then stir in onion. Transfer to a bowl and let sit.
  • Heat up the grill until it's nice and hot at medium-high temperature.
  • Combine cheese with beer, mustard powder, paprika, and Worcestershire sauce, stirring until well mixed. Set aside.
  • Place the bread slices under the grill for 2-3 minutes until golden. Spread the untoasted sides with the cheese mixture, then grill on a baking tray for another 2-3 minutes until bubbling and golden.
  • Coat the watercress with oil and season it. Drain the onion and mix it with the watercress.
  • Place a fried egg on top of each rarebit and sprinkle with freshly ground black pepper. Then, accompany with watercress salad for a delightful dining experience.
