Ingredients:
  • 2 large egg yolks
  • 150 g crème fraîche
  • 1 level teaspoon English mustard powder
  • 100 g freshly grated Cheddar cheese
  • 4 tablespoons Cheeky chilli-pepper chutney or shop-bought chilli jam, to taste
  • 4 x 2 cm thick slices of good-quality bread (use sourdough or country style)
  • Worcestershire sauce
Instructions:
  • 1. Preheat the grill until hot. Whisk egg yolks with crème fraîche and mustard powder, then mix in cheese and season with sea salt and black pepper. Spread chutney on toasted bread slices, then top with rarebit mixture, making sure to spread to the edges to prevent burning. Grill until melted and bubbling. Divide onto plates, criss-cross the topping with a knife, and finish with a drizzle of Worcestershire sauce.
