Tangy fermented beets with garlic in a simple brine, a delicious twist on a classic side dish.
Ingredients:
  • 2 pounds beets, peeled and cut into chunks
  • 4 cloves cloves garlic, peeled
  • 6 peppercorns
  • 2 bay leaves
  • 3 cups water, boiled and cooled
  • 1 tablespoon salt
Instructions:
  • Divide the beet chunks evenly between two jars with lids. Then, place 2 cloves of garlic, 3 peppercorns, and 1 bay leaf in each jar.
  • In a bowl, create a brine by mixing water and salt until the salt is fully dissolved. Pour the brine into the jars until the beets are completely covered.
  • Secure lids on jars and allow them to rest at room temperature until foam forms on top, approximately 1 week. Once foam develops, move jars to a cool place at 50 degrees F (10 degrees C) for 2 to 3 days. Chill in the refrigerator for storage.
