Refreshing summer drink garnished with fresh fruit for a burst of color and flavor.
Ingredients:
  • 1 cup fresh strawberries, stems removed, rinsed
  • 2 cups fresh raspberries, rinsed
  • 1 1/2 cups sugar
  • 3 cups boiling water
  • 4 hibiscus tea bags
  • 1 cup fresh lemon juice (about 6 lemons)
  • 1 cup cold water
  • Ice
Instructions:
  • Combine the mixed berries and sugar in a 2-quart saucepan. Cook over medium heat for 6 to 8 minutes, stirring occasionally, until the berries release their juices and the sugar is dissolved.
  • Blend the berry mixture until smooth using an immersion blender or regular blender. Strain the mixture through a fine mesh strainer into a large bowl, pressing the berries to extract all the puree. Discard the solids and let the berry syrup cool to room temperature.
  • Pour boiling water over tea bags in a 4-cup glass measuring cup. Allow the tea to steep for 5 minutes. Remove the tea bags and let the tea cool to room temperature.
  • Combine lemon juice and water in a large pitcher. Stir in the cooled berry syrup and hibiscus tea until well mixed. Serve over ice.
