Vibrant puree made with New Mexican dried chiles for a bold red hue and anchos for a deep, sweet flavor profile.
Ingredients:
  • 4 dried ancho chiles
  • 4 dried New Mexico chiles
  • 3 cups chicken stock
  • 0.5 white onion, diced
  • 3 cloves garlic, minced
Instructions:
  • Using a sharp knife, slice the ancho chiles and New Mexico chiles lengthwise to remove seeds and stems. Transfer the chiles to a large saucepan along with chicken stock, onion, and garlic. Bring to a boil over high heat, then simmer over medium heat for about 15 minutes until the chiles are softened.
  • Transfer the chile mixture to a blender, filling it halfway. Secure the lid with a folded kitchen towel, pulse a few times to start blending, then puree until smooth. Transfer the mixture to a clean pot or use a stick blender to puree directly in the pot.
