Red fruit salad with Pimm's and vanilla syrup

Pimm's enhances fruit desserts for a delightful twist.
Ingredients:
  • 125ml (1/2 cup) water
  • 1 vanilla bean, split lengthways
  • 1 strip lemon peel
  • 60ml (1/4 cup) Pimm's No. 1 Cup
  • 2 firm ripe plums, halved, stones removed, cut into wedges
  • 1 x 250g punnet strawberries, hulled, washed, dried, halved
  • 1 x 120g punnet raspberries
  • 125g cherries
Instructions:
  • In a saucepan over low heat, simmer water, sugar, vanilla bean, and lemon peel for 2 minutes until sugar dissolves. Increase heat to high and boil for 2 minutes until slightly thickened. Remove from heat, add Pimm's, then let it cool for 10 minutes before using.
  • Mix the plum, strawberries, raspberries, and cherries in a bowl, then pour the Pimm's mixture over the fruits. Cover the bowl with plastic wrap and refrigerate for 2 hours to enhance the flavors.
  • Divide the vibrant red fruit salad into elegant serving glasses, generously drizzle with syrup, and serve promptly.
