Delectable onion marmalade with caramelized red onions in red wine and balsamic vinegar complements grilled meats perfectly.
Ingredients:
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 large red onions, thinly sliced
  • 0.25 cup white sugar
  • 1 cup dry red wine
  • 0.25 cup balsamic vinegar
Instructions:
  • In a large skillet over medium heat, melt butter in oil. Add onions and sugar, cook and stir until onions caramelize, about 15 minutes.
  • Combine red wine and balsamic vinegar in the skillet and bring to a boil. Simmer over medium-low heat until the liquid is evaporated, about 15 to 20 minutes. Season with salt to taste.
