Indulge in decadent whoopie pie cookies with luscious cream cheese filling.
Ingredients:
  • 2 tablespoons butter, softened
  • 1/2 cup granulated sugar
  • 1 1/2 cups Original Bisquick™ mix
  • 2 tablespoons unsweetened baking cocoa
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 2 teaspoons red food color
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1/4 cup butter, softened
  • 1/2 teaspoon vanilla
  • 1 1/4 cups powdered sugar
Instructions:
  • Preheat your oven to 350°F and prepare 2 large cookie sheets by lining them with cooking parchment paper.
  • In a medium bowl, cream 2 tablespoons of butter with granulated sugar using an electric mixer until light and fluffy. Add the rest of the cookie ingredients and beat on medium speed for 4 minutes, scraping the bowl occasionally, until the mixture is smooth. Drop 28 slightly rounded tablespoonfuls of dough onto cookie sheets, spacing them at least 2 inches apart.
  • Bake for 8 to 10 minutes until tops spring back when lightly touched. Let cool for 2 minutes, then transfer to cooling racks to cool completely.
  • In a medium bowl, combine cream cheese, softened butter, and vanilla; beat with an electric mixer until smooth. Gradually add powdered sugar, continue mixing on low speed until well blended. Increase speed to medium and beat for 1 minute until creamy.
  • Spread a generous tablespoon of filling on the bottom of one cookie, then sandwich it with another cookie, bottom side down. Chill in the refrigerator and sprinkle with more powdered sugar before serving, if desired.
