Indulge in our luscious red velvet whoopie pies with creamy white filling and a burst of berry flavor. Delicious!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Devil's Food Cake Mix
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 tablespoons red food color
  • 1 box (4-serving size) chocolate instant pudding and pie filling mix
  • 1 cup butter or margarine, softened
  • 2 cups marshmallow creme
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
Instructions:
  • Preheat oven to 350°F and prepare cookie sheets with parchment paper or cooking spray.
  • In a large bowl, mix cookie ingredients with an electric mixer on low speed until moistened; continue to beat on high speed for 1 minute. Use a 1/4 cup to drop batter onto cookie sheets, spacing them 2 inches apart.
  • Bake for 13 to 16 minutes until just set (avoid overbaking). Let cool for 2 minutes, then transfer from cookie sheets to cooling racks. Allow to cool completely, approximately 15 minutes.
  • In a large bowl, use an electric mixer on high speed to whip up the filling ingredients until they are light and fluffy. For each sandwich cookie pie, smooth about 1/4 cup of the filling onto the bottom of one cooled cookie. Add a layer of blueberries and raspberries, and then place the second cookie on top, bottom side down. Refrigerate the pies covered until ready to serve.
