Red velvet whoopie pies

Irresistible and tender whoopie pies that are a delight to savor!
Ingredients:
  • 125g butter, softened
  • 161.25 gm caster sugar
  • 8.80 gm vanilla extract
  • 2 eggs
  • 3 tsp red food colouring
  • 437.50 ml plain flour
  • 32.50 gm cocoa powder
  • 2.50 gm bicarbonate of soda
  • 1.00 gm baking powder
  • 1 tsp apple cider vinegar
  • 130.00 gm buttermilk
  • 75g butter, softened
  • 225.00 gm icing sugar mixture, sifted
  • 200g cream cheese, softened
Instructions:
  • Preheat the oven, line baking trays, then cream butter, sugar, and vanilla until fluffy using an electric mixer. Add eggs one at a time, followed by food coloring. Sift flour, cocoa, bicarbonate of soda, and baking powder into a separate bowl.
  • Gradually incorporate half of the flour mixture into the butter mixture, mixing until combined. Pour in the vinegar and half of the buttermilk, stirring to combine. Continue with the remaining flour mixture and buttermilk, mixing until just combined.
  • Using level tablespoons of mixture, place them on the prepared trays, ensuring they are 5cm apart to allow for spreading. Bake one tray at a time for 8 to 10 minutes or until the cookies are puffed and fully cooked. Let them stand on the trays for 2 minutes, then transfer to a wire rack to cool. Repeat the process with the remaining trays.
  • In a mixing bowl, use an electric mixer to blend butter, icing sugar, and vanilla until light and fluffy. Incorporate cream cheese and continue beating until smooth. Spread level tablespoons of the filling between cakes to create 22 whoopie pies. Enjoy!
