Indulgent lemon limoncello cake, a delicious finale for any Italian meal.
Ingredients:
  • cooking spray
  • 1 cup plain yogurt
  • 2 eggs
  • 0.33333334326744 cup canola oil
  • 2 tablespoons lemon juice
  • 2 tablespoons lemon zest
  • 1 cup sugar
  • 0.25 cup limoncello liqueur
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 pinch salt
  • 0.75 cup confectioners' sugar
  • 3 tablespoons limoncello liqueur
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease an 8-inch cake pan with cooking spray.
  • In a large bowl, combine yogurt, eggs, canola oil, lemon juice, lemon zest, sugar, and 4 tablespoons limoncello. In another large bowl, mix flour, baking powder, baking soda, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to over mix to ensure a tender cake. Transfer batter to prepared pan.
  • Bake in the oven until the top is golden and a toothpick inserted in the center comes out clean, approximately 35 minutes. Let it cool before serving.
  • Combine powdered sugar and 3 tablespoons of limoncello in a small bowl, stirring until smooth. Then, prick the top of the warm cake all over with a fork or toothpick before generously spooning the glaze over it. The glaze will soak into the cake, keeping it moist and flavorful.
