Refreshing Summer Rhubarb Slushy

Refreshing summer rhubarb slushy, naturally sweetened. Perfect for all ages - add alcohol for adults.
Ingredients:
  • 2 cups chopped rhubarb
  • 0.5 cup water, divided
  • 1 pinch salt
  • 3 medium limes, halved
  • 0.5 cup maple syrup, or more to taste
  • 5 cups ice cold water, or as needed
  • ice as needed
Instructions:
  • In a food processor or blender, pulse together rhubarb, 1/4 cup water, and salt until rhubarb is finely chopped.
  • Lay a cheesecloth over a jug and pour the blended rhubarb onto it. Bundle up the cheesecloth, then press and extract all the flavorful juice from the rhubarb. Dispose of the pulp.
  • Combine the maple syrup in a jug and stir until fully dissolved.
  • Squeeze fresh lime juice into the jug and thoroughly combine. Pour in ice-cold water and stir with a large wooden spoon. Taste and adjust sweetness as needed. Chill the rhubarb limeade in the refrigerator until serving.
  • To prepare a refreshing slushie, combine 3/4 cup of rhubarb limeade and 1 cup of ice in a blender. Blend until you achieve the perfect consistency.
