Tender rhubarb cooked and chilled, layered with sweet whipped cream for a refreshing summer BBQ treat!
Ingredients:
  • 2.25 pounds rhubarb
  • 0.33333334326744 cup orange juice
  • 1 pinch salt
  • 2 cups cold heavy whipping cream
  • 2 tablespoons white sugar
Instructions:
  • Prepare the rhubarb by trimming the ends and cutting it into 6-inch lengths. Soak the pieces in a large bowl of cold water for 20 minutes. After soaking, drain and pat dry. Finally, slice the rhubarb crosswise into 1/2-inch pieces.
  • Combine orange juice, 1 cup of sugar, and salt in a saucepan. Bring to a boil, then add rhubarb. Simmer over medium-low heat, stirring only a few times, until rhubarb is tender (7 to 10 minutes). Avoid over-stirring to maintain rhubarb's texture. Transfer mixture to a glass or ceramic bowl, cover with plastic wrap, and refrigerate for at least 1 hour until cold.
  • In a large bowl, use an electric mixer to whip the heavy cream and remaining sugar until soft peaks form.
  • Layer the rhubarb mixture and whipped cream in small glasses, repeating until filled to the top. Chill in the refrigerator for 1-6 hours before serving.
