Make a quick and delicious rhubarb fool dessert, perfect for a Low FODMAP diet!
Ingredients:
  • 1 large bunch fresh rhubarb, cut into 2cm pieces
  • 107.50 gm caster sugar
  • 250.00 gm water
  • 240.00 gm premium vanilla custard (see note)
  • 300ml thickened cream, whipped
Instructions:
  • In a saucepan over low heat, gently simmer rhubarb, sugar, and water until the sugar is dissolved, about 5 minutes. Increase heat and bring to a boil.
  • Lower the heat and gently simmer for 20-25 minutes, or until the rhubarb is tender and the mixture has thickened. Allow it to cool to room temperature before using.
  • Combine the custard and cream delicately, then alternately layer the custard mixture and rhubarb in serving glasses.
