Roast cauliflower with thyme and hazelnut butter

Delight in versatile cauliflower florets as a tasty side dish.
Ingredients:
  • 950g cauliflower
  • 18.20 gm olive oil
  • 50g butter, chopped
  • 20.00 ml fresh thyme leaves
  • 62.50 ml hazelnuts, roughly chopped
  • 1 garlic clove, thinly sliced
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Place cauliflower in a microwave-safe dish and microwave on high for 3 minutes until it starts to soften.
  • Transfer mixture to a 6 cup baking dish. Drizzle olive oil, season with salt and pepper, and roast for 20 minutes. Turn and roast for an additional 15-20 minutes until golden and tender.
  • In a small frying pan over medium-high heat, melt butter until golden, then add thyme and hazelnuts. Swirl and cook for 1 minute until hazelnuts are golden. Add garlic and continue swirling for 1 more minute until garlic is golden and butter is browned. Pour over cauliflower and enjoy.
