Roasted apple and Brussels sprouts with crispy bacon

Roasted apples, Brussels sprouts, and crispy bacon are a perfect blend of sweet, tart, and salty flavors for any occasion.
Ingredients:
  • 2 x 500g bags frozen Brussels sprouts
  • 3 pink lady apples, cored, cut into wedges
  • 4 middle bacon rashers, trimmed, finely chopped
  • 57.50 gm walnuts, roughly chopped
  • 20.00 ml fresh chives, chopped
Instructions:
  • Preheat your oven to 220C/200C fan-forced and line a large baking tray with baking paper. Boil sprouts in a saucepan, drain, rinse under cold water, and let them cool for 5 minutes.
  • Halve the sprouts and combine them in a bowl with apple slices and oil. Season generously with salt and pepper, then toss to ensure everything is evenly coated. Spread the sprouts and apples in a single layer on a baking tray. Sprinkle the bacon on top and roast for 15 minutes.
  • Toss in walnuts and roast until apples and sprouts are golden and tender, about 15 minutes. Sprinkle with chives before serving.
