Herb-baked baby carrots ready in 45 minutes - a simple and delicious side dish!
Ingredients:
  • 4 teaspoons vegetable oil
  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
  • 1/4 teaspoon garlic salt
  • 1 bag (16 ounces) plus 1 bag (8 ounces) baby-cut carrots (9 cups)
Instructions:
  • Preheat oven to 425°F and generously coat a 13x9x2 inch rectangular pan with cooking spray.
  • Combine all ingredients in a large bowl, excluding the carrots. Incorporate both bags of carrots, ensuring they are evenly coated. Transfer the carrots to a baking pan for cooking.
  • Roast in the oven for 35 to 40 minutes, gently stirring every so often, until the carrots are soft.
