Cheesy Parmesan-roasted carrots and cauliflower with thyme make a comforting and delicious side for chilly nights.
Ingredients:
  • 1 pound carrots, peeled and sliced
  • 1 head cauliflower, trimmed and cut into bite-size florets
  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon minced garlic
  • 0.5 teaspoon ground black pepper
  • 1 cup grated Parmesan cheese, or more to taste
Instructions:
  • Preheat the oven to a piping hot 400 degrees F (200 degrees C).
  • Toss carrots and cauliflower with olive oil, thyme, garlic, salt, and pepper in a roasting pan, then cover with aluminum foil.
  • After 20 minutes in the preheated oven, remove the foil, stir the vegetables, and bake for an additional 15 minutes until tender. Finish by tossing the vegetables with Parmesan cheese.
