Roasted Cauliflower 'Steaks'

Transform a cauliflower head into stunning vegetable 'steaks', perfect for a meatless Monday feast!
Ingredients:
  • 1 head cauliflower, trimmed
  • 2 tablespoons extra-virgin olive oil, or more to taste
  • 0.25 teaspoon garlic powder, or to taste
  • salt and ground black pepper to taste
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and prepare a baking sheet with a shiny layer of aluminum foil.
  • Prepare the cauliflower by placing it on a cutting board with the stem side up. Slice vertically into 4 even steaks. Place the cauliflower steaks on a baking sheet. Drizzle olive oil on top and season with garlic powder, salt, and black pepper.
  • Roast in a preheated oven for 20 minutes, then turn with a spatula and continue roasting until tender in the middle and golden around the edges, for about 15 minutes longer.
