Delightful holiday side dish: Roasted cauliflower with shallots, orange, and thyme - vegan-friendly crowd-pleaser.
Ingredients:
  • 2 medium heads cauliflower, cut into florets (9 to 10 cups)
  • 2 medium shallots, sliced
  • 1/3 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 tablespoon chopped fresh thyme leaves
  • 2 teaspoons shredded orange peel
  • 1/4 cup toasted pine nuts, if desired
Instructions:
  • Preheat oven to 400°F and generously coat an 18x13-inch rimmed pan with cooking spray.
  • Combine cauliflower, shallots, olive oil, salt, and pepper in a large bowl, ensuring all ingredients are evenly coated. Spread the mixture in a pan and roast for 35 minutes. Stir the mixture and continue roasting for an additional 15 to 20 minutes, or until golden brown and tender.
  • Coat roasted cauliflower with fragrant thyme and zesty orange peel, then sprinkle with pine nuts for added crunch.
