Roasted garlic bread

Ingredients:
  • 625.00 ml bread and pizza plain flour
  • 1 1/2 tsp instant dried yeast
  • 20.00 gm caster sugar
  • 40.00 ml chopped fresh chives
  • 2.40 gm sea salt
  • 250.00 gm warm water
  • 36.40 gm olive oil
  • 1 bulb garlic
  • 20.60 gm milk
  • olive oil, to serve
Instructions:
  • 1. Preheat your oven to 220°C/200°C fan-forced and line a baking tray with baking paper. 2. In a bowl, sift in 2 cups of flour. Add yeast, sugar, chives, and half of the salt. Make a well in the center and pour in water and oil. Mix to form a soft dough. 3. Turn the dough out onto a lightly floured surface. Add the remaining flour and knead for 10 minutes until smooth and elastic.
  • Form dough into a 10cm x 25cm oval shape. Transfer to prepared tray and cover with lightly greased plastic wrap. Let it rise in a warm spot for 1 hour until doubled in size.
  • Wrap the garlic in foil and roast in the oven for 30 minutes until tender. Let it cool, then remove the garlic cloves from their skins and discard the skins. Finally, reduce the oven temperature to 200°C/180°C fan-forced.
  • Create dimples in the dough by pressing your fingertips gently. Insert garlic cloves into a few of the dimples. Brush the top of the dough with milk and sprinkle with pepper and the rest of the salt. Bake in the oven for 25 to 30 minutes until it turns golden brown. Let it cool on the trays for 5 minutes, then transfer to a wire rack. Serve and enjoy!
